We've added one of the world’s most coveted culinary collections to our portfolio: authentic Japanese Wagyu sourced directly from Japan’s prestigious annual auction in Kyoto. 


Tommy Hall and Executive Chef Matthew Niessner were among just 16 Americans invited to attend the exclusive event. There, the duo personally selected our exclusive reserve of premium A5 Japanese Wagyu, sourcing exceptional cattle from three distinct prefectures: Yamaguchi, Hokkaido and Kagoshima.

From Auction to Table: Halls Wagyu Experience

In development for almost a year, this special evening will showcase Halls’ private collection of the finest Japanese wagyu personally procured by Tommy Hall and Chef Niessner at the exclusive Himeji World Auction in Japan. Hailing from three distinct Japanese prefectures, each featured Wagyu presents a unique flavor profile and texture. Chef Niessner and our culinary teams from Halls Chophouse, Halls Catch, High Cotton, SNOB and Halls Signature Events will explore the unique nuances of each Prefecture’s Wagyu—beef that has never before been served in Charleston. The evening will include Japanese-inspired cocktail pairings, storytelling, cooking demonstrations and more to create an inspired culinary experience that presents Japan’s finest beef through the unique lens of Hall Management Group restaurants.

Following the series launch, the Wagyu Dinner Series will continue with a curated lineup of one-night-only experiences hosted at High Cotton Charleston and at Halls Chophouse Nexton. Each event will offer a unique interpretation of the rare Japanese A5 Wagyu, showcasing the creativity and culinary perspective of each chef while celebrating one of the world's most prized ingredients. 


Wagyu Meets the Lowcountry: Japan's Northern Prefecture, Hokkaido A5 Wagyu Dinner Series

Southern Hospitality Suffused with Japanese Tradition. Join Executive Chef Jonah Bordner for two exceptional dinners merging Hokkaido Eden Wagyu and Lowcountry Seafood. This dinner will showcase some of the world’s rarest Wagyu Beef raised naturally in the snowy mountain region of Japan’s Hokkaido Prefecture. The snowy mountains and vast wilderness allow these award-winning steer to graze freely and stress-free on natural pastures and local feed, producing richly flavored Wagyu with exceptional lean meat.

Halls Cuts Into Wagyu: KirishiMarble Dinner Series

Experience one of the world's most extraordinary ingredients through the lens of Halls Chophouse. Halls Chophouse Nexton proudly presents an exclusive Wagyu Dinner Series featuring the exceptional KrishiMarble Wagyu. Raised in Japan’s Kagoshima Prefecture, KrishiMarble Wagyu is mountain-raised on an Omega Premium diet to yield omega-3-rich, sustainable cattle.
Each dinner in this four-part series will feature a unique 6-course menu with pairings that showcase the unique depth, richness and elegance of this rare beef. Thoughtfully curated intermezzos will provide a seamless progression throughout the evening's culinary journey.
